Soffritto is, for Italians, the holy trinity of Italian cuisine. In this lesson, you will learn how to prepare and cook a perfect Italian soffritto. Used commonly when creating soups, sauces, stews, or braises, it include onions, celery, and carrots in a 2:1:1 ratio. Soffritto is the Italian word for “under-fried” or “fried slowly” and perfectly describes the process of gently cooking vegetables in oil to soften them and release their flavour.
After learning how to prepare soffritto, you will learn how to use it with the most famous Italian sauce: tomato sauce.
In this lesson you will learn how to use soffritto and tomato sauce to prepare and cook a typical Italian pasta: spaghetti with fresh tomato sauce and basil.
